Interesting Admittal

I saw this when I was reading some reviews on you tube. I thought it was interesting that someone actually admitted some wrong was done. It's great though that they had that passion and hoping we will have that same passion to change the world.

Portobello Sammy with yummy salads

So, I forgot completely to take pictures while make this but thought that its pretty easy.


Portobello Mushroom Burger with Spicy Avocado Sauce

Its actually a recipe off of Martha Stewart but it was really yummy so i thought I'd share

serves 2

2 large cleaned portobellos with stems removed

1 tblsp evoo

salt and pepper

1 ripe avocado that is roughly chopped

1 tblsp. spicy brown mustard

1 tblsp. horseradish

Juice of a fresh lime

1 jalapeno chopped ( with or without seeds/inner body for heat control)

2 hamburger buns ( i bought challah buns)

Tomato ( 1lg or a couple of small to put on top of your "burger"

Shredded Mozzarella for top of "burger"


Preheat oven to 425 and on a large rimmed baking sheet toss mushrooms with evoo and 2/3c. water and season to taste with s&p. place mushrooms stem sides down.

( i made this in a lg measuring glass and then poured the oil/water mixture over the mushrooms)

while baking, mash avocado with fork in a bowl. Stir in mustard, horseradish, lime juice, and jalapeƱo. Season with salt and pepper.

Divide rolls and toast them. Then place a portobello on top of roll with a little bit of tomato and shredded cheese.

Enjoy!

I served it with some Greek salad I bought at the grocery store and some corn on the cob.
